Imagine a huge over-sized chocolate chip cookie ice cream cone, heavenly tantalizing!
As the days are getting longer and warmer…. it’s about time…. my thoughts have been wandering off about all the ice cream flavors I love and miss all winter long. The past winter began early and during those cold winter months the thought of ice cream was constantly over shadowed by thoughts of a heating blanket for all those days below freezing.
While many now are cleaning out their golf bags and getting ready to tee off, I am making room in my freezer to stock up on my favorite ice creams. The summer season is short and my kids truly enjoy having an ice cream cone with their own favorite flavor. My boys love anything with chocolate, whether it’s caramel, nuts or marshmallow, while the girls love vanilla.
My favorite ice cream… Pralines & Cream!
When outside, nothing beats a good old fashioned sugar cone filled with ice cream…. I could inhale one right now just thinking about it… back to the topic at hand… I came across this morning something I never thought about and that was ..cookie dough as an ice cream cone! Imagine one huge over-sized chocolate chip cookie, freshly baked, all nice and gooey carefully rolled into a perfect delectable cone filled with your favorite ice cream! I can hardly wait to try it and I know which recipe I will use. A few years ago, while I lived in Calgary, my neighbor, while in University use to make the chocolate chip cookies for one of University Football Teams in Toronto after the game. Was always a huge hit and when she made them for me, I have to admit, they were delicious. My kids love them and as they come out of the oven, they head straight into their tummies!
MY FAVORITE CHOCOLATE CHIP COOKIES
1/3 CUP SHORTENING (I USE CRISCO)
1/3 CUP BUTTER
1/2 CUP PACKED BROWN SUGAR
1/2 CUP WHITE SUGAR
1 TSP VANILLA
MIX THOSE FIRST 6 INGREDIENTS IN A BOWL THEN ADD TO IT
1 1/4 CUP FLOUR
1/2 TSP BAKING SODA
1/2 TSP SALT
60G PACKAGE OF SEMI-SWEET CHOCOLATE CHIPS ( KEEP 1/4 CUP TO MELT AND SWIRL INTO THE MIXTURE AT THE END)
ADD MORE FLOUR IF NEEDED TO GET RIGHT CONSISTENCY FOR A COOKIE DOUGH.
BAKE AT 375 ˚ FOR 8 TO 10 MINUTES
WATCH THEM CAREFULLY TO NOT OVER BAKE THEM SO THEY WILL BE SOFT AND GOOEY, JUST HOW MY KIDS LOVE THEM!
