My Favorite & Best Apple Cake Recipe

One of my favorite desserts is an apple cake and this recipe is still the one I always go back to because I love it’s moistness and flavor. As I am not quite a great baker, sometimes it comes out of the pan beautifully and well…. other times it comes out as you will see below but I love this cake so I am posting the recipe and the pictures of my “flop” cake…. My kids ate it all nevertheless!

Apple Cake Recipe

Start with 6-8 apples, pared and thinly sliced. Then sprinkle them with 1/2 cup of white or brown sugar & 2 tsp of cinnamon. I love the scent of it all mixed up!

Next in a bowl beat 2 eggs, 1 cup of sugar & 1 tsp of vanilla until it is nice and fluffy. Once it is nice and fluffy beat in 1/2 cup of oil.

Prepare the dry ingredients separately,

1 1/2 Cups of Flour
2 tsp. baking powder
1/4 tsp. salt

Next add liquid alternately with dry ingredients and beat just until smooth. Spoon half of the batter into a lightly greased 9 “ square baking pan or in what I like to use a bundt pan.

Spread it out evenly with a rubber spatula then add the apples which have been mixed with the cinnamon & sugar.

Now cover the apples with the remaining batter, it is a bit tricky to spread but it just takes some time to do with a spatula.

Sprinkle with icing sugar if you like, I don’t because for me there is more than enough sugar in this recipe.
Bake 350 for 50-60 minutes, until it is nicely browned.

Now comes my “flop” photo… usually comes out quite nicely but this time it didn’t so I resorted to patching it up as best as I could!

    I have had similar issues with apple cakes. I think McIntosh apples can become quite mushy when cooked and might have took much liquid is why it was a bit soggy and fell apart. Not sure, maybe someone who bakes well can give you some advice but looks yummy all the same 🙂

    Although your cake didn’t come out quite perfect it looked nice and moist so I tried it, was really very good and my kids also loved it. It’s like you said, it’s about the flavor and not so much how perfect it is when it comes to kids.
    Keep trying!
